The storefronts between Gemma and Lip Lab on Henderson Avenue are hinting at what will be there in the future. 

The Dallas Morning News reported that ice cream shop Salt & Straw and PopUp Bagels are moving into those spaces, while posting a picture of the storefront windows covered in the respective branding.

This is also confirmed by permitting filed with the City — a sign permit for a Salt & Straw wall sign and a commercial alteration addition permit for “a new ‘take-out only’ bagel concept”-related construction.

Neither Salt & Straw, nor PopUp Bagels has the new stores listed on their websites. In fact, both have locations around the country but none in Texas. But that is expected to change soon. The Dallas Morning News reported that Salt & Straw plans to open a store in Fort Worth in addition to Dallas, and PopUp Bagels will be popping up across the state, first on West Lovers Lane.

In some ways, these companies contrast from each other. PopUp Bagels touts a simple menu of “unmistakably perfect bagels with no frills,” which are meant to be consumed in the “grip, rip and dip” fashion. Meanwhile, Salt & Straw seems to have all the frills with maxed out butterfat and creative ingredients — hello, strawberry honey balsamic with black pepper.

It’s not clear when these eateries will open.
