Lemma Coffee Co. is opening a new location at Mockingbird Station within the coming months.
“Over the last four years, we’ve solidified the different aspects of operating a coffee shop, our practices on bar, how we deal with challenges, upholding high expectations and keeping the product and the experience consistent for customers,” founder Daniel Baum said in an Instagram reel. “We believe now is a great opportunity for us to take the next step as a company and open our next shop.”
Lemma originally began in Denton in 2017, selling its products at local farmers markets before opening a coffee truck in 2018 and a location at The University of Texas at Dallas (UTD).
“We didn’t want to take the risk of signing a big commercial lease and felt that was a nice step forward in the right direction, which ultimately led us to open a coffee bar on a local college campus for two semesters,” Baum said. “We ended up opening our downtown Carrollton shop in the summer of 2019 to solidify our brand and get in front of customers.”
When the pandemic hit, the UTD location quickly shut down, prompting Lemma to open another location in Frisco in December of 2020.
“We were fortunate to have an opportunity to reopen that college coffee bar, but the hybrid learning presented too many challenges for us to operate sustainably on that campus,” Baum said. “In 2022, a location in downtown Plano became available, so we jumped on that and opened that spot. We are stoked to be a part of [that] community now.”
As Lemma continues to renovate the space over the next four to six weeks, Baum looks forward to serving this new community when the venue officially opens.
“Nine years of relentless effort from so many people have led us to this opportunity,” Baum said. “We can’t wait to show you what we’ve come up with.”
